What You’ll Need
- 2 good pork sausages
- 2 rashers back bacon
- 2 large eggs
- ½ tin baked beans
- 2 flat mushrooms
- 1 large tomato, halved
- 2 slices white or sourdough bread
- Butter
- Oil for cooking
- Salt and pepper
Let’s Cook — Step by Step
- Step 1 — Start with the sausages — they take the longest. Heat a non-stick pan over medium heat with a little oil. Add sausages and cook slowly for 15–20 minutes, turning regularly until cooked through and deeply golden.
- Step 2 — 10 minutes before the sausages are done, add the mushrooms and tomatoes to the pan cut-side down. Season with salt and pepper.
- Step 3 — Warm the beans in a small saucepan.
- Step 4 — Push mushrooms and tomatoes to the side. Add bacon — cook 2–3 minutes each side for crispy.
- Step 5 — Fry the eggs in a separate small pan in butter. Baste with butter for a soft white and runny yolk.
- Step 6 — Toast the bread. Butter it.
- Step 7 — Arrange everything on a warm plate.
- Step 8 — Eat while everything is still hot.
