Bircher Muesli with Apple and Honey

What You’ll Need
- 1 cup rolled oats
- 1 cup apple juice (or milk if you prefer)
- ½ cup Greek yoghurt
- 1 apple, coarsely grated
- 2 tbsp flaked almonds
- 1 tbsp honey
- Juice of ½ lemon
- MORNING TOPPINGS: fresh fruit, extra yoghurt, toasted seeds
Let’s Cook — Step by Step
- Step 1 — Combine oats and apple juice in a bowl or jar. Stir, cover, and refrigerate overnight.
- Step 2 — In the morning, mix in Greek yoghurt, grated apple (squeezed of excess juice first), flaked almonds, honey, and lemon juice. Stir well.
- Step 3 — The texture should be thick and spoonable. Add a splash of milk if it’s too thick.
- Step 4 — Spoon into bowls and top with fresh fruit, a dollop of yoghurt, and a scatter of toasted seeds.
Kitchen Tip: Squeeze excess juice from the grated apple before adding it, otherwise the muesli becomes watery.
