Pea and Ham Soup (#112)
“This is the soup I make when I have a leftover ham hock. It’s deeply savoury, thick as a blanket, and costs almost nothing.”
What You’ll Need
- 1 ham hock
- 300g split green peas, soaked overnight
- 2 onions
- 2 carrots
- 2 celery stalks
- Bay leaves, thyme
- Black pepper
Let’s Cook — Step by Step
- Step 1 — Simmer ham hock in water 2 hours. Remove meat, shred.
- Step 2 — Cook vegetables in stock. Add drained peas.
- Step 3 — Simmer until peas dissolve into the soup.
- Step 4 — Stir in shredded ham.
- Step 5 — Season with pepper — it’s already salty enough from the ham.
Kitchen Tip: Ham hock gives you the stock and the meat — two for one. It’s the best ingredient for this soup.
