“This is the tart I make for picnics and lazy Saturday lunches. The combination of brie and mushrooms feels very grown-up, very French, and very good.”

What You’ll Need

  • Shortcrust pastry, blind-baked
  • 300g mixed mushrooms, sliced
  • 150g brie, sliced
  • 2 large caramelised onions
  • 3 eggs
  • 200ml double cream
  • Thyme, salt, pepper

Let’s Cook — Step by Step

  1. Step 1 — Sauté mushrooms in butter until golden.
  2. Step 2 — Whisk eggs and cream.
  3. Step 3 — Layer caramelised onions and mushrooms in pastry case.
  4. Step 4 — Pour egg mixture over. Top with brie slices.
  5. Step 5 — Bake 30 mins at 180°C until just set.

Kitchen Tip: Don’t overfill the tart case — the filling expands as it bakes.
