What You’ll Need
- Shortcrust pastry, blind-baked
- 300g mixed mushrooms, sliced
- 150g brie, sliced
- 2 large caramelised onions
- 3 eggs
- 200ml double cream
- Thyme, salt, pepper
Let’s Cook — Step by Step
- Step 1 — Sauté mushrooms in butter until golden.
- Step 2 — Whisk eggs and cream.
- Step 3 — Layer caramelised onions and mushrooms in pastry case.
- Step 4 — Pour egg mixture over. Top with brie slices.
- Step 5 — Bake 30 mins at 180°C until just set.
