- Step 1 — Put butter in a small non-stick pan over medium heat. Watch it carefully — it will foam, then the foam will subside, and then the milk solids will start to turn golden brown and smell nutty. That’s your moment.
- Step 2 — Crack both eggs straight into the browned butter. Season with salt immediately.
- Step 3 — Here’s the technique for crispy edges: tilt the pan slightly and use a spoon to baste the hot butter over the yolks continuously for about 60–90 seconds. The whites will crisp at the edges.
- Step 4 — The yolks should be just set on the outside but still runny inside.
- Step 5 — Meanwhile, toast the bread until dark golden.
- Step 6 — Slide the eggs onto the toast. Crack over some black pepper and add chili flakes if using.
